Feels like I haven't made a decent set in flipping forever. I dunno, the last one was meh. OH WHATEVER.
This is again for two contests, but before I continue, I'd just like to give a shoutout to my lovely friend on here @anneliese-p, of whom I stole the poetry-thing at the side of the set idea from (sorry, but it always looks so nice!) Anneliese is also a fellow Whovian (OMIGOSH LAST EPISODE TONIGHT OMIGOSH DYING THREE MORE HOURS) and a lovely person who doesn't mind my rambling, so thanks dear! xx

RECiPE: WHiTE CHOCOLATE CUPCAKES!!!
iNGREDiENTS...
~ 125g butter, chopped
~ 1 x 100g pkt good-quality white
~ cooking chocolate, chopped
~ 215g (1 cup) caster sugar
~ 125ml (1/2 cup) milk
~ 1 egg, lightly whisked
~ 115g (3/4cup) plain flour
~ 75g (1/2 cup) self-raising flour
~ 1 tsp vanilla bean paste (Queen brand)
~ Silver cachous, to decorate
FOR THE GANACHE...
~ 2 x 180g pkts good-quality white cooking chocolate, chopped
~ 125ml (1/2 cup) thickened cream
STEP 1:
~ Preheat oven to 160°C. Line twelve 80ml (1/3-cup) capacity muffin pans with paper cases.
STEP 2:
~ Combine the butter, chocolate, sugar and milk in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until chocolate melts and mixture is smooth.
~ Remove from heat. Transfer to a medium heatproof bowl and set aside for 5 minutes to cool slightly.
STEP 3:
~ Use a balloon whisk to gently whisk in the egg.
~ Sift the combined flours over the chocolate mixture and gently whisk until just combined.
~ Stir in the vanilla bean paste.
~ Pour mixture evenly among prepared muffin pans. Bake in preheated oven for 30 minutes or until a skewer inserted into the centres comes out clean.
~ Turn onto a wire rack and set aside for 1 hour to cool completely.
STEP 4:
~ Meanwhile, to make the white chocolate ganache, place the chocolate and cream in a medium heatproof bowl over a medium saucepan half-filled with simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir occasionally until chocolate melts and mixture is smooth.
~ Place in the fridge for 1 1/2 hours, stirring occasionally, or until ganache is spreadable.
STEP 5:
~ Use a round-bladed knife to spread cupcakes evenly with ganache. Sprinkle with cachous to decorate.
